I’d like to make a suggestion to anyone doing baking or working with flours – most flours, even organic flours, are rancid due to processing. Any flour that you might use, in fact, is highly indigestible since it has not been prepared in the traditional way that our ancestors used to do. The best for cooking and baking is sprouted flour. Something many people aren’t acquainted with is how to properly prepare grains. One reason we have so much disease and inflammation in developed countries (particularly in the U.S.) is due to the overuse of grains, soy, and corn from processed foods, eating meats from grain-fed livestock (cattle are ruminants and meant to eat grass)and grains that are genetically-modified and prepared improperly.

The overuse of improperly prepared grains greatly contributes to heart disease, obesity, diabetes, and many other degenerative diseases. Grains, soy, and corn contain phytic acid, a compound that greatly inhibits the absorption of nutrients in foods our bodies attempt to digest.
